Nagano prefecture is very famous for its miso. We are using local pork, locally grown vegetables in miso nabe(hot pot).

What is nabe?
Nabe means pot in Japanese. Nabe ryori means a meal cooked in a pot. Generally vegetables and meat, noodles, rice, seafood cooked at the tables and shared by multiple people.
It is either eaten with the broth or with a dip. Nabe is filling and warm as well as nutrient-rich that helps you to get through a harsh winter in Japan.
Thus, it has long been one of the popular staple winter dish in Japan.
